Rosemary Smashed Potatoes

A quicker, slightly more rustic take on mashed potatoes, smashed potatoes keep their peels and some lumps. Other herbs can be substituted.
Prep/Cook Time 30 minutes
Servings 6

Ingredients
  

  • 2 ½ lbs red potatoes
  • 4 Tablespoons butter
  • 1 cup buttermilk
  • 2 teaspoons minced garlic 4 cloves
  • 2 teaspoons minced fresh rosemary
  • Salt and pepper

Instructions
 

  • Cut potatoes into 1 inch pieces. Put them in a pressure cooker or large pot and cover with water. Add a teaspoon of salt. Cook until soft, 8 minutes on high in a pressure cooker or about 15 minutes boiling on the stove top. Drain the water from the pot, and return to a low heat. Add butter, buttermilk, garlic, and rosemary to the potatoes. Use a potato masher to gently smash and mix, leaving them lumpy. Add salt and pepper to taste.
