Portuguese-style Mussels

Ingredients

3 lbs fresh mussels
2 Tablespoons olive oil
2 Tablespoons butter
2 teaspoons minced garlic cloves
2 cups chicken broth
1 cup white wine Riesling
fresh parsley chopped for garnish

Instructions

Prepare the mussels. Fresh mussels are . . . alive! Place them in a colander in the sink, and rinse with water, scrubbing them with your fingers to remove any debris and the fibrous “beard” if present. If the shell is open, tap it against the side of the sink. If it’s alive, it will close. If not, discard it.
Heat the olive oil and butter over medium heat in a dutch oven. Saute the garlic for about 5 minutes, but do not allow it to brown. Add the chicken broth and wine. Bring the broth to a gentle boil. Add the mussels and cover the pot. Steam for 2 – 3 minutes until the shells open. Avoid overcooking. Discard any unopened shells. Garnish with fresh, chopped parsley.
Serve “family style” in the pot or in individual bowls. French bread can be used to sop up the broth.
