Hearts of Palm Salad

This traditional Brazilian dish uses canned hearts of palm, which is convenient if you don’t want to harvest the inner core of a palm tree stem yourself. The flash of red from the tomatoes and red onions makes it especially appropriate for the day!
Prep Time 20 minutes
Servings 5

Ingredients
  

FOR THE SALAD

  • 1/2 of a small red onion thinly sliced
  • 2 14oz cans of sliced hearts of palm, drained
  • 1 medium tomato diced
  • 2 green onions / scallion sliced (use the whites and an inch or so of the greens)

FOR THE DRESSING

  • 3 Tbsp. olive oil
  • 2 tsp. fresh lime juice
  • 1/4 tsp. salt
  • a pinch of black pepper

Instructions
 

  • Soak the sliced red onion in a bowl of ice water for about ten minutes. In the meantime, prepare the rest of the salad ingredients, and combine the dressing ingredients in a measuring cup or small bowl.
  • Drain the sliced red onion, and combine in a salad bowl with the sliced hearts of palm, diced tomatoes, and green onions. Pour the dressing over the salad and stir gently to coat.
  • Delicious served with toasted bread or flatbread.
