Gumdrop Dancing Sun Cupcakes

Ingredients
  

  • 12 yellow-frosted cupcakes
  • 24 red yellow, and orange gumdrops
  • Powdered sugar
  • 2 Tablespoons chocolate chips + a scant ½ teaspoon vegetable oil optional, if you want a smiling dancing sun!

Instructions
 

  • Make 12 cupcakes using the cake recipe (not the topping) from the St. Damien Pineapple Upside Down Cake, or any cake recipe or box mix you prefer. Any canned or homemade white frosting can be tinted yellow with food coloring or a dash of ground turmeric.
  • Lightly sprinkle powdered sugar on your work surface and a rolling pin. Roll gumdrops into flat ovals about ⅛ inch thick. Cut a thin sliver off the top and bottom of each oval to make rectangles. Cut each rectangle in half crosswise to make 2 squares; cut each square diagonally in half to make 2 triangles.
  • Arrange 8 gumdrop triangles around the edge of each cupcake for sun rays.
  • To make a smiling face on your sun, melt the chocolate chips in the microwave (30 seconds at a time) and mix with the oil. Transfer the chocolate to a zip top plastic bag, and cut a tiny corner off. Use that as a tip to pipe eyes, smiles, sunglasses, wiggle-mouths, ORE POR NÓS (“Pray for Us” in Portuguese), or anything you’d like on the cupcakes.
