Delivery Chocolate Fridge Cake

This old-fashioned dessert is easy for kids to help put together and makes a great addition to a meal delivery for the feast of the Visitation, or any time. It keeps in the fridge for weeks, so your recipients can enjoy it at their convenience! Substitute the dried fruits of your choice.

Chill Time 2 hours
Servings 9 people

Ingredients
  

  • 8 oz graham crackers 7-8 full sheets
  • 5 oz semisweet chocolate
  • 5 oz milk chocolate
  • ½ cup honey or maple syrup
  • 1 stick butter 8 Tablespoons
  • ½ cup raisins
  • ¾ cup dried apricots chopped
  • ½ cup chopped pecans optional

Instructions
 

  • Line an 8×8 or 5×7 inch pan with plastic wrap, leaving the ends hanging over the sides.
  • Put the graham crackers in a plastic bag and crush them into approximately ½ inch pieces with a rolling pin or your hands.
  • Melt the chocolate, butter, and honey or syrup in a glass bowl set over a pot of simmering water.
  • Remove the bowl from the heat and add in the broken crackers, fruits, and nuts.
  • Spoon the mixture into the pan. Level the surface with a piece of wax paper or plastic wrap sprayed with cooking spray.
  • Let the cake set in the fridge for 1-2 hours.
  • To serve, turn the cake out, peel off the plastic wrap, and cut into slices.
