Assumption Herb Roast with Horseradish Cloud

The blessing of herbs is traditionally associated with the feast of the Assumption. This tasty roast can be made with blessed or unblessed herbs and served alongside a fluffy cloud of horseradish whipped cream. I use rosemary, sage, oregano, basil, thyme, parsley, and chives.

Ingredients
  

  • For the roast:
  • 1 3lb boneless beef eye round roast
  • Salt and pepper
  • 2 cups tightly-packed mixed fresh herbs of your choosing or ⅔ cup dried herbs
  • 3 teaspoons diced garlic 6 cloves
  • ½ cup plus 2 Tablespoons vegetable oil divided
  • For the whipped cream:
  • 2 cups heavy whipping cream
  • 2 Tablespoons prepared horseradish or to taste

Instructions
 

  • To make the roast:
  • Preheat the oven to 350° F. Pat the roast dry and generously season it with salt and pepper. Heat 2 Tablespoons of oil in a roasting pan or oven-proof skillet. Sear the outside of the roast until browned, 2 minutes per side, 8 minutes total. Combine the herbs, garlic, and 1 cup oil in a food processor and pulse to create a paste (or finely mince everything and mix). Spread herb mixture on all sides of the roast and place it on a rack in a roasting pan or other baking dish. Bake in the oven until the roast is cooked to medium-rare (125° F on an instant-read thermometer), about 45 minutes, or to your preferred doneness. Let the roast rest 10 minutes before slicing.
  • To make the horseradish whipped cream:
  • Whip the cream on high in a mixer until fluffy, about 2 minutes. Add prepared horseradish and mix gently with a rubber spatula to combine.
