Water Cake

This traditional Italian cake is light, fluffy, and great if you happen to be out of (or avoiding) eggs and dairy. Add cocoa powder, espresso powder, cinnamon, fresh herbs, and/or citrus zest for a punch of flavor, but it’s tasty as is!
Prep Time 15 minutes
Cook Time 40 minutes
Servings 12

Ingredients
  

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup granulated sugar
  • 1 cup water
  • 1/4 cup vegetable canola or olive oil
  • 2 teaspoons vanilla
  • 2 Tablespoons powdered sugar to dust the finished cake

OPTIONAL ADDITIONS

  • 1 Tablespoon lemon zest or orange zest
  • 4 Tablespoons cocoa powder
  • 1 teaspoon cinnamon
  • 1 teaspoon espresso powder
  • 1 tablespoon fresh chopped basil or rosemary

Instructions
 

  • Preheat the oven to 350°F. Grease the sides of an 8 inch round cake pan (springform works best). Line the bottom with parchment paper.
  • In a large bowl, combine the flour, baking powder, and sugar (and any powdered flavor additions). Whisk by hand or in a mixer until evenly combined. Add the water, oil, and vanilla (and any herbs or citrus). Whisk/mix until the batter is smooth.
  • Pour the cake batter into the prepared cake pan. Bake for about 40-45 minutes or until the surface of the cake is a light golden brown and toothpick inserted comes out clean. Let the cake cool before slicing and serving. Dust cake with powdered sugar before serving.
