Sienese Straw & Hay Pasta

Paglia e fieno or “straw and hay” is a traditional dish from the Siena region of Italy. It’s a delicious combination of pasta, prosciutto, cream, peas, and Parmesan cheese. To make it look like, well, straw and hay, it’s usually made with an equal combination of spinach fettuccine and egg fettuccine. However, if spinach fettuccine isn’t readily available, you could always do just hay, or substitute a tricolor bowtie or rotini mix. Bacon can be substituted for the prosciutto.

Servings 4

Ingredients
  

  • 12 ounces pasta
  • 2 Tablespoons butter chopped
  • 1 Tablespoon olive oil
  • 6-8 ounces prosciutto in thin strips
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 2 cups parmesan cheese grated (divided)
  • Freshly ground black pepper to taste

Instructions
 

  • Cook the pasta according to the package directions. (If two different pastas have different cooking times, stagger their additions to the pot.) Drain the pasta, return it to the pot, add the butter, and cover it. Add the prosciutto and olive oil to a saute pan and cook it over medium heat until red and crispy. Drain any excess fat from the pan. Add the cream, peas, 1 cup of parmesan cheese, and pepper to the pan with the prosciutto. Stir over medium heat until it is combined and heated through. Add the prosciutto mixture to the noodles with the rest of the parmesan cheese.
