Shamrock Cucumber Tea Sandwiches
- 8 ounces cream cheese
- 8 slices white bread
- 2 mini cucumbers cut into ⅛ inch slices
- Dill weed fresh (chopped) or dried
- Salt and pepper
- Spread 2 tablespoons of cream cheese on each piece of bread. Use a 2 ½ inch circle cutter (or a drinking glass) to cut two rounds out of each bread slice. Sprinkle each with a bit of salt and pepper and dill. Arrange three mini cucumber slices on each round, to look like a shamrock. Cut two cucumber slices into quarters and trim off the center, leaving about ⅛ of an inch of the skin and flesh, to make a shamrock stem.
