Our Lady’s Blueberry Cornbread
Mary’s is one of only three birthdays on the liturgical calendar each year (the others are Jesus’ and John the Baptist’s). Kids love a birthday party, and this is a perfect day to let them head up the decoration committee and create drawings and random paper cut outs that are claimed to be flowers. We keep a shelf out in the garage of birthday party leftovers, like plates and streamers and balloons, and they get to use that too. They get to help make a blue birthday cake and use too many sprinkles. At the birthday party, I serve blue food, as blue is Mary’s color. Of course, there aren’t many blue foods, so the menu gets a bit odd, but that’s part of the fun. Here’s our favorite blueberry cornbread recipe.
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- ½ cup white sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- ⅔ cup buttermilk
- ½ cup vegetable oil
- 2 cups blueberries
Instructions
- Preheat the oven to 400° F. Grease a 9-inch square baking pan.
- Mix cornmeal, flour, sugar, baking powder, and salt in a bowl. Beat eggs, milk, and oil together in a separate large bowl. Add cornmeal mixture to the egg mixture; mix until just combined. Fold blueberries into the batter; pour into the prepared baking dish.
- Bake until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
