Divine Mercy Sundaes

Simple and sweet, these ice cream sundaes are a tasty way to celebrate Divine Mercy Sunday. We use red and blue fruit and/or sprinkles to represent the rays of love and mercy that emanate from the heart of Jesus. I think vanilla ice cream makes for the prettiest presentation, but my kids prefer more exciting ice cream flavors. Fresh or frozen berries will work.

Ingredients
  

  • 1 pint ice cream
  • ½ cup reddish berries strawberries, raspberries, sliced if applicable
  • ½ cup blueish berries blueberries, blackberries
  • 4 teaspoons red sprinkles
  • 4 teaspoons blue sprinkles
  • Whipped cream
  • 4 cherries

Instructions
 

  • Place a scoop of ice cream into each of four bowls. Atop the left side of the scoops, make a line of red berries that widens towards the bottom. Atop the right side, do the same with the blue berries. Add a teaspoon of red sprinkles over the red berries and a teaspoon of blue sprinkles over the blue berries. At the top, where the red and blue rays meet, put a dollop of whipped cream and place a cherry on top.
