Pope St. JPII Polish Sausage & Peppers

Pope St. John Paul II’s favorite food, famously, is a puffed pastry and custard cream dessert now known as kremówka papieska or "papal cream cake." (A recipe for that dessert was included in the Catholic All Year Liturgical Living Subscription Box for Fall Ordinary Time.) Other than that, he was known for eating whatever was placed before him, and not making his food preferences known. I’d like to think that the Polish nuns who did his cooking might have occasionally made him something like this one-pan kielbasa skillet dinner!

Ingredients
  

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 ½ cup onion chopped into approximately ¾ inch pieces
  • 24 ounces Yukon Gold baby potatoes washed and sliced into quarters
  • 1 cup water
  • 1 rope kielbasa sausage about 14oz, cut into ½ inch slices
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic chopped
  • 2 bell peppers 1 red and 1 orange, chopped (about 2 ½ cups)

Instructions
 

  • In a large skillet (at least 10 inches), melt the butter and olive oil, and add the potatoes, garlic, and onion. Cook over medium-high heat, stirring frequently, until the potatoes begin to brown, about 15 minutes. Add the water and cook, stirring occasionally, until the water has evaporated and the potatoes can be pierced with a fork, about 10 minutes. Add the sliced kielbasa, peppers, salt and pepper, and cook until heated through and brown on the outside, stirring frequently, about 5 minutes.
