Melchior’s Ham & Cheese Pinwheels

Ingredients
  

  • 1 puff pastry sheet thawed (½ box)
  • 3 tablespoons Dijon mustard
  • ½ teaspoon dried dill
  • 1 tablespoon honey
  • 6 slices thin deli-sliced ham
  • 1 cup grated sharp cheddar cheese
  • 2 tablespoons Parmesan cheese grated
  • 3 tablespoons chives chopped

Instructions
 

  • Preheat the oven to 375° F. Unfold the puff pastry sheet on a piece of parchment paper. Combine the mustard, honey, and dill in a small bowl. Brush the honey mustard mixture onto the pastry sheet. Layer the ham slices over the length of the puff pastry. Sprinkle the cheddar cheese over the ham. Using the parchment paper to lift it, roll the pastry into a tight spiral. The roll can be placed in the freezer for 15 minutes at this point to make cutting easier, or if you’re in a hurry, just go for it. Using a sharp, serrated knife, cut the log into 12 even slices. Place the pinwheels flat on a parchment-lined baking sheet, reshaping them a bit into rounds if necessary. Sprinkle with the parmesan cheese.
  • Bake for 20-25 minutes until golden brown. Remove and sprinkle with the chopped chives. Serve with additional honey mustard mix, if desired.
