Shamrock Cucumber Tea Sandwiches

Traditional cream cheese and cucumber tea sandwiches get an open-faced Saint Patrick’s Day twist for a feast day tea party. These can also be made as a traditional closed sandwich. Other Irish Tea Party favorites include round Irish scones, shortbread or sugar cookies, and other little tea sandwiches like salmon, chicken salad, egg salad, or watercress.

Ingredients
  

  • 8 ounces cream cheese
  • 8 slices white bread
  • 2 mini cucumbers cut into ⅛ inch slices
  • Dill weed fresh (chopped) or dried
  • Salt and pepper

Instructions
 

  • Spread 2 tablespoons of cream cheese on each piece of bread. Use a 2 ½ inch circle cutter (or a drinking glass) to cut two rounds out of each bread slice. Sprinkle each with a bit of salt and pepper and dill. Arrange three mini cucumber slices on each round, to look like a shamrock. Cut two cucumber slices into quarters and trim off the center, leaving about ⅛ of an inch of the skin and flesh, to make a shamrock stem.
